A soft fork tightens rules so that old nodes still accept new blocks. A hard fork changes them incompatibly, and if a meaningful group refuses to upgrade, the chain splits permanently into two.
Bitcoin Cash and Ethereum Classic both exist because of hard forks, which is also why they share algorithms or histories with their parent chains.
